This recipe looks like it takes a long time to prepare, but truthfully, it takes no time at all. All you need to make this delicious raspberry parfait is chia seeds, almond milk, maple syrup, coconut flakes and fresh raspberries. It’s the perfect treat for any time of the day and looks so pretty layered and served in a champagne glass.
HEALTH BENEFITS
Chia Seeds are considered a superfood. They are very high in fibre and contain omega-3 fatty acids and antioxidants. The protein in chia seeds is a complete protein with all nine essential amino acids. This makes chia seeds essential for a vegan diet.
Raspberries are high in antioxidants which help fight signs of ageing by fighting free radicals. They are also high in fiber and vitamin C. The quercetin found in raspberries has anti-inflammatory effects that may help reduce swelling, prevent heart disease and kill cancer cells,
Coconut Flakes coconuts contain manganese, copper, iron and selenium. They are also high in healthy fats and are a natural source of medium chain triglycerides (MCTs). Just make sure that you buy natural coconut flakes with no added sugar.
HOW TO MAKE RASPBERRY CHIA PARFAIT
This will be one of the easiest recipes that you will ever make. There is minimal prepping and no cooking involved. All you need is 1 cup of raspberries, 1/4 cup of chia seeds, 1/4 cup of coconut flakes, 1 cup of almond milk and 1 tablespoon of maple syrup to balance out the tartness of the raspberries.
To begin wash and rinse the raspberries and set them aside. Measure out the chia seeds, maple syrup and almond milk and add to a bowl. Homemade almond milk is always best, you can get my recipe here.
Mix all the ingredients together and let chill for about an hour in the fridge making sure to stir occasionally until the chia mixture sets and becomes firm.
In a separate bowl add almost all the raspberries but keep a few aside to garnish with. Mash the raspberries with a fork until they become like chunky puree.
Now you can layer a glass starting with a raspberry at the bottom, then a thick layer of the chia mixture, followed by a thin layer of coconut flakes and a layer of raspberry puree.
Continue until you’ve reached the top of the glass. Sprinkle with more coconut flakes and add a raspberry as a garnish.
Serve and enjoy this healthy dessert!
