CHOCOLATE AVOCADO PUDDING

This decadent raw vegan chocolate pudding is healthy and made with superfood ingredients. It’s a guilt-free treat that everyone will love but especially those trying to avoid refined sugar.

This recipe is easy to make and requires only a handful of ingredients and less than 10 minutes to prepare. You will need ripe avocados, medjool dates, raw cacao powder, creamy almond milk and a touch of vanilla.

The avocados make this pudding super smooth and creamy and the raw cacao and medjool dates infuse this recipe with the goodness of chocolate superfoods that is naturally sweetened.

In my opinion, it’s the best pudding I’ve ever had! It does not taste like avocado it tastes like creamy chocolate. It’s wonderful devoured on its own or you can use it as a delectable frosting for cakes and cupcakes

HEALTH BENEFITS

Avocados are an excellent source of healthy monounsaturated fat and vitamin E. They are a good source of folate, fibre and minerals including iron, copper and potassium. They are also an excellent source of dietary fiber and can be beneficial for weight management. The combination of healthy fats, fibre, and low sugar content can contribute to feelings of fullness and satisfaction,

Dates are a natural sweeter that doesn’t spike blood sugar levels, high in fibre, rich in iron and contain the beautiful B vitamins B1, B2, B3 and B5.

Almond milk is high in protein, low in calories and lactose-free. Plus, making it yourself will ensure there are no nasty additives. If you choose to buy it, then always check the ingredient label to see what it contains.

Raw Cacao is high in antioxidants, it’s great for mood enhancement because it contains phenylethylamine (PEA), a compound known to stimulate the release of endorphins and enhance mood. Cacao is also a good source of essential minerals such as magnesium, iron, and potassium.

HOW TO MAKE CHOCOLATE AVOCADO PUDDING

This might be the easiest dessert you’ve ever made!

All you will need to do is gather the ingredients. Remove the pits from the avocado and dates and place them in a food processor or high-speed blender.

Measure out the cacao powder, almond milk and vanilla and add all the ingredients to the food processor and blend until smooth.

Once it's smooth and has a pudding consistency scoop the pudding into a glass container and chill covered in the fridge for about 30 minutes.

Once ready serve the pudding in glasses and decorate it with your favourite ingredients.

This recipe is for 2 large dessert bowls or 4 smaller dessert bowls, but if you double the ingredients you can make a larger portion.

I also like to use this pudding on cakes and cupcakes because it is very rich and can be used as a frosting.
